Signature Decaf

Signature Decaf is for people who want the full coffee experience without the caffeine. It is smooth, sweet, and clean, with none of the flat or harsh taste people expect from decaf. Just a good cup you can drink any time of day.

At a glance

The coffee comes from Colombia and is decaffeinated with the sugarcane process. High-scoring lots are soaked in a natural extract made from fermented sugarcane, which removes the caffeine without the high heat and pressure that strip flavor. The beans are then cleaned and re-dried before export. We roast it medium to keep it balanced and approachable.

How to brew it

• Drip and pour-over: 1:16 ratio, medium grind. Same recipes as Signature Roast.
• French press: 1:15, coarse grind, 4 minute steep.
• Decaf espresso: 18 g in, 38 g out, 28 to 30 seconds. Decaf beans are more porous, so grind one step coarser than your regular espresso.
• Freshness window: decaf ages a little faster. Best within 3 weeks of roast.

Good after dinner, good at 3 pm, good any day you want to cut caffeine without cutting corners.

Every bag is roasted to order in Dallas, never pulled from a shelf. We roast once a month, on the 1st, and every bag ships within 3 business days of roasting, with tracking by email. Order by the 28th and your beans are reserved for the next roast. Depending on when in the month you order, it can take up to about 5 weeks to arrive, but it reaches you days off the roaster instead of months. Free shipping on US orders over $50.
