About Olive & Oak Coffee

Olive & Oak Coffee is a family-run, small-batch coffee roaster in Dallas, Texas. We roast to order once a month, ship nationwide, and keep a tight lineup of four coffees so every one stays dialed in.

The name blends both sides of our heritage. The olive is for our Greek roots and the oak is for our Latvian heritage. It stands for identity, craft, and the pride we take in what we make.

Who We Are

Olive & Oak was founded in 2025 by Alec and Shannon Pritzos. We live in Lucas, Texas, just north of Dallas, and started roasting for friends and family before opening the online store. Alec spent his career in technology and customer experience; the roaster is where he goes to make something you can hold.

Our Story

Olive & Oak was built around a simple idea: clean, reliable, high-quality coffee with none of the noise. No factory-style production and no mass blends. Just small-batch coffee roasted in Dallas and delivered fresh.

Each bag reflects consistency, precision, and a focus on flavor without complication.

How We Roast

We roast once a month, on the 1st, in small batches. Every order placed by the 28th goes into the next roast. Bags ship within 3 business days of roasting with the roast date printed on the bag. We never hold roasted coffee in inventory.

Where the Coffee Comes From

We work with farms in Brazil (Mogiana), Ethiopia (Bensa, Sidama), and Colombia (Huila) known for clean profiles and dependable sweetness. No commodity lots. Only coffees selected for quality.
