Do You Need a Coffee Grinder? Whole Bean vs Ground, and What to Buy

Yes, you need a grinder. It is the single biggest upgrade you can make to your coffee, bigger than the machine and bigger than the beans. Here is why, and what to buy.

Why ground coffee goes stale so fast

A whole bean has a small surface area and holds its aromatic oils inside. Grinding it multiplies the surface area by thousands and exposes everything to oxygen. Within 15 to 30 minutes most of the aroma is gone. Within a day the coffee tastes flat. Pre-ground coffee in a bag has usually been ground for weeks before you open it.

That is why Olive & Oak ships whole bean only. We roast on the 1st, ship within 3 business days, and the bag arrives days off the roaster. Grinding it right before you brew is what keeps that freshness in the cup.

Burr, not blade

A blade grinder chops beans unevenly, so you get powder and boulders in the same batch. The powder over-extracts and tastes bitter, the boulders under-extract and taste sour. A burr grinder crushes beans between two surfaces to a consistent size. Even a cheap burr grinder beats an expensive blade grinder.

What to buy

Budget Type Good for Examples
$30 to $60 Manual hand grinder Pour-over, French press, drip. One or two cups at a time Hario Skerton Pro, Timemore C2, 1Zpresso Q2
$100 to $150 Electric burr Drip, pour-over, French press for a household Baratza Encore, OXO Brew Conical, Fellow Opus
$180 to $300 Electric burr, espresso capable Espresso and everything else Baratza Encore ESP, Fellow Opus, 1Zpresso J-Max (manual), Eureka Mignon

If you make espresso, the grinder matters more than the machine. A $150 machine with a $200 grinder beats a $500 machine with a $50 grinder every time.

Grind size cheat sheet

  • Coarse (sea salt): French press, cold brew
  • Medium (sand): drip, auto-brewers
  • Medium-fine (table salt): pour-over, AeroPress
  • Fine (flour-ish): moka pot
  • Very fine (powder, clumps): espresso

If you really cannot grind at home

Buy the smallest bag you can and use it within a week. Store it sealed and away from light. And email us; if enough people ask, we will add a grind option.

Otherwise, grab a hand grinder and a bag of Signature Roast. You will taste the difference on the first cup.
